Here are two blue cheese dressings, one classic and one with a tip of the hat to a more healthy style. The classic is from One Big Table and the second is from Moosewood.
Classic – 1 1/2 cups
1 cup mayonnaise
3 garlic cloves, minced
¼ cup chopped fresh parsley
½ cup sour cream
1 tablespoon lemon juice
½ teaspoon Worcestershire sauce
1 tablespoon red wine vinegar
2 ounces or more of blue cheese – good quality and dry enough to crumble
Kosher salt and pepper
In a bowl, whisk together everything but the salt and pepper. Season. Cool for 30 minutes or more. This will keep about 10 days.
Moosewood
1 clove minced garlic
1 cup yogurt
½ cup mayonnaise
½ cup blue cheese, crumbled
2 tablespoons vinegar or lemon juice
1 teaspoon honey
Pepper to taste
Mix all together except pepper, then season and cool. Keeps a week or so.
