2 Cups cherry tomatoes, quartered
1/4 cup mint, finely chopped
1-2 tsp. of thyme, chopped
1/2 tsp salt
black pepper to taste
1 tsp. lemon zest
1 Tbsp lemon juice
2 Tbsp olive oil
1/4 cup onion, chopped
1 1/2 cup cucumbers, chopped
Mix it all together. It’s very light and refreshing on a hot day.
