Cucumber and Onion Salad


MRS. ROWE’S RESTAURANT – serves 4 to 6

2 large cucumbers, thinly sliced
1 onion, thinly sliced and separated into rings
½ cup apple cider vinegar
4 teaspoons sugar
2 teaspoons vegetable oil
1 teaspoon salt
½ teaspoon black pepper

Combine onions and cucumbers in a large bowl.

Combine the vinegar, sugar, and iol in a small saucepan over high heat. Bring to a boil and cook, stirring constantly, for 1 minute, until sugar dissolves. Pour the vinegar mixture over the cucumbers and onions and stir to coat evenly. Add salt and pepper and toss well.

Cover and refrigerate for at least 30 minutes, until chilled. Can be served cold or at room temperature.
