Ingredients:
1 or 2 (or more) tomatoes
1 or 2 (or more) teaspoons unsalted butter
1 or 2 (or more) eggs
Salt and black pepper
Shredded cheese, if desired
Chopped fresh parsley, if desired
Directions:
1. Preheat the oven to 350 F. Lightly oil a baking dish large enough to hold the number of tomato nests you are preparing.
2. Cut the top from each tomato and hollow out some of the center. Place 1 teaspoon butter in the cavity of each tomato. Crack 1 egg into the cavity. Sprinkle with salt and pepper.
3. Place in the baking dish; top with shredded cheese and parsley, if using. Bake for 15 to 20 minutes, until the eggs are firm.
