Garlic Scape Pesto


Moosewood Restaurant New Classics

1 1/2 cups coarsely chopped garlic scapes

1/3 cup grated Parmesan cheese

3 tbls olive oil

1/3 cup toasted pine nuts ( toasted sunflower seeds can be used instead)

1-2 tbls water (optional)

salt and pepper to taste

Combine the garlic scapes, cheese, oil, and nuts in a food processor and blend until fairly smooth. Add water as needed to make a spreadable paste. Add salt and pepper to taste.
