Gremolata: A Traditional Italian Condiment


2/3 cup finely chopped fresh parsley
2 cloves garlic, minced
1 ½ tablespoons grated lemon zest (yellow part only)

Mix all ingredients. Let stand at least 30 minutes to allow flavors to blend. Use to top baked ptoatoes, broiled chicken, or any mild-flavored baked fish. Makes 2/3 cup.
