Cook’s “The Best Recipe” – makes about ½ cup or 8 servings
2-1/2 teaspoon lemon juice
¼ teaspoon salt
¼ teaspoon pepper
4 tablespoons extra-virgin olive oil
1tablespoon drained and minced capers
1tablespoon fresh parsley leaves, minced
1 teaspoon of fresh thyme leaves or about 1/4th dry
1 medium garlic clove, minced fine
Combine lemon juice, salt and pepper in a bowl and mix until smooth. Whisk in the capers, parsley, thyme and garlic.
