Spinach and Whole Grain Salad with Kiwi Dressing


2 tbls olive oil

1 cup chopped red onion

1 cup cooked grain ( Kamut, bulghur, wheat berries or quinoa work well)

2 cups packed fresh spinach

1/2 cup chopped fresh parsley

1/3 cup sunflower seeds

1/3 cup chopped walnuts

1 kiwi sliced

1/3 kiwifruit dressing (recipe below)

1. In a skillet heat oil over medium heat. Add onion and cook, stirring occasionally for 6 minutes or until soft. Stir in grain and heat through.

2. Meanwhile in a bowl combine spinach and parsley. Drizzle with hot onion mixture along with any pan juices. Add sunflower seeds, walnuts, kiwi slices, and dressing. Toss to combine.

Kiwifruit Dressing

3 well ripened kiwis, cut into quarters

1/3 cup grapeseed oil

2 tbls rice vinegar

1. In a blender or bowl, blend or mas kiwis. In a jar with a tight fitting lid combine mashed kiwis, oil, and vinegar. Place lid on jar and shake well. Dressing will store in refrigerator for up to 5 days.
